Easy Bruschetta Recipe

Bruschetta is an Italian antipasto dish that uses diced tomatoes. It is a delicious and refreshing dish that is easy to make and perfect for a light meal or as an appetizer.

Ingredients:

6 Roma tomatoes, diced
2 clove2 of garlic, minced
2 tablespoons of fresh basil, chopped
2 tablespoons of extra virgin olive oil
1 tablespoon of balsamic vinegar
Salt and pepper, to taste

Instructions:

1. In a medium bowl, mix the diced tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper.
2. Let the salsa sit for about 10 minutes to allow the flavors to meld.
3. Slice the bread, place it on a baking sheet, and drizzle with olive oil.
4. Bake in the oven until lightly toasted.
5. Top with salsa mixture and serve immediately. Optional garnish with fresh basil leaves.

Note:

Make the tomato mixture up to 3 hours in advance for more flavor!
A sprinkle of parmesan cheese can be added to the bread before baking.
